Itamae Yujia Hu Makes The World Of Sushi, Fashion And Art Collide

Edible art that’s too good to eat!

What started of as an experiment to promote his restaurant, has made this Milan based chef Instagram famous, with 30,000 followers! Yujia’s “shoe-shi” collection comprises of sushi that channels a pair of Louboutin, Gucci loafers and Supreme slides, have given the traditional Japanese dish a fashion twist. And his creations are not just limited to shoes. Fancy eating a Tom Ford sushi? Or Karl Lagerfeld for lunch? Hell yeah!

cM: What’s you story? How did you start making edible art?

YH: I started about 10 years ago when my family decided to open a small Japanese take away restaurant in Milan. Unfortunately, I had to quit art school since I was the eldest, and started managing the business when I was 18 years old. Then about a year ago, I was thinking of ways to promote my restaurant. And thought of recreating different characters out sushi, from NBA players to movie characters, music artists, and sneakers – all by using basic sushi ingredients.

cM: How long does it take you to make it?

YH: It takes about 30 minutes to recreate a shoeshi, and forty minutes to an hour or more for my onigiri characters. It all depends on the details of the specific figure.

 

cM: What inspires you?

YH: Living in Milan gives me access to fashion and art – I’m inspired my city and  from the web as well.

cM: What training have you received? 

YH: I learnt the basics from a master sushi chef when I was 18. When he left, with time I practised and improved my skills.

 

cM: What’s the best way to make sushi? 

YH: I use the basic ingredients of a traditional sushi preparation. Sushi sticky rice, nori, avocado, wasabi, ginger, sesame seeds, raw fishes as salmon, tuna, and sea bream. It’s as simple as that.
